Elizabeth’s Pumpkin Spice Pie:
Ingredients:
2 pie crusts
15 ounces pumpkin puree
3 eggs
1 1/4 cup brown sugar
1 tbsp cornstarch
1/2 tsp salt- 1 1/2 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
1/8 tsp ground cloves
1/8 tsp black pepper
Preheat oven to 375*. Whisk together pumpkin puree, eggs, and brown sugar. Add in cornstarch and spices. Pour evenly into pie crusts. Bake at 375* for 55-60 minutes.
Kelly’s Apple Pie:
6 cups of thinly sliced green apples
1 cup of sugar
2 tablespoons of flour
1 teaspoon of cinnamon
dash of nutmeg
Mix the dry ingredients with the apples and place them in the bottom layer of the crust. Place the second crust on top and crimp around the edges. (I use one package of Pillsbury pie crusts (one for the bottom and one for the top) Make slits in the top of the crust in several places. Top with dots of butter, cinnamon, and sugar. Bake in a 375 degree oven for 50 minutes. Cool before serving and top with vanilla ice cream or whipped topping.
