Apple Dumplings (National Apple Dumpling Day – September 17)
2 Granny Smith apples, peeled
2 packages refrigerated crescent rolls
2 sticks butter
1½ cups brown sugar
1 teaspoon vanilla
1 teaspoon cinnamon
1½ cups Mountain Dew®
vanilla ice cream
Spray 9-by-13-inch pan with oil. Preheat oven to 350º. Cut each apple into 8 slices. Place an apple slice on each crescent roll. Roll apple up from large end within the crescent roll. Place rolls in pan. Melt butter. Stir in sugar, vanilla, and cinnamon. When thickened, remove from heat, and pour over dumplings. Pour the Mountain Dew around the rolls (not on top of them). Bake 35-40 minutes until golden brown. Serve warm with ice cream. Serves approximately 8-12.
White Chocolate Crispy Treats (National White Chocolate Day – September 23)
20-24 ounces white chocolate almond bark
1 cup peanut butter
4 cups Rice Krispies®
12-ounce jar unsalted peanuts
6-ounce bag of mini marshmallows
Melt white chocolate using package directions. Pour into a large bowl. Combine with peanut butter, and stir until blended. Pour in remaining ingredients, and mix until well coated. Drop by spoonfuls onto waxed paper. Let sit until hardened. Makes approximately 40.
Key Lime Pie Bars (National Key Lime Pie Day – September 26)
2 cups graham cracker crumbs
3 tablespoons sugar
pinch salt
8 tablespoons unsalted butter, melted
6 ounces cream cheese, room temperature
14-ounce can sweetened condensed milk
4 egg yolks
½ cup lime juice
½ teaspoon vanilla extract
whipped cream (optional)
lime slices (optional)
Preheat oven to 350º. Line a 9-by-9-inch pan with parchment paper; set aside. In a bowl, mix crumbs, sugar, salt, and butter. Press crumbs into the bottom of the pan. Bake 10 minutes. In a large bowl, beat cream cheese until smooth. Mix in condensed milk. Add egg yolks one at a time, mixing well after each. Add lime juice and vanilla, and mix until combined. Pour filling in crust. Bake 15-18 minutes or until set. Remove from oven. Place in refrigerator for 4 hours before serving. Serve with whipped cream and a slice of lime if desired. Serves 9-12.
Coffee Punch (National Coffee Day – September 29)
4 cups brewed coffee
¼ cup sugar
4 cups milk
2 cups chocolate ice cream
2 cups vanilla ice cream
whipped cream, optional
In a container, combine coffee and sugar; stir until sugar is dissolved. Refrigerate at least 2 hours. When ready to serve, pour coffee mixture into a punch bowl. Add milk, and mix well. Top with scoops of ice cream and stir. Serve with whipped topping if desired. Serves approximately 16-20.
