When I wrote my first Bible study, I invited an few friends over once a week to dive into the Word together and cook dinner. We discovered that cooking together, sharing recipes, and lingering around one another’s tables set the tone for the deeper things God wanted to do in our lives. Recently my Mom mentioned that she had cooked a delicious and healthy recipe, and because I cannot think of anything more lovely than sharing with you all something healthy that was given to me by my mom, this month I bring you lettuce wraps. I pray that you, too, will be able to gather others to your table and experience community served fresh.
1 small onion, chopped
½ cup carrots, chopped
3 cloves of garlic, minced
1-2 cups of broccoli slaw
2 scallions, sliced
Fresh cilantro to taste, chopped
2 tablespoons fish sauce
2 tablespoons soy sauce
2 tablespoons apple cider vinegar
Salt & pepper to taste
1. Place mushrooms, onion, and carrots in the food processor and pulse until pieces are chopped small but not mushy.
5. Add the broccoli slaw and stir around until it has soften up but is still crunchy.
7. Spoon into lettuce leaves and serve.
