Olé, Amigas! Happy Cinco de Mayo weekend. We can always find a reason to have a good time, right?
Here’s a simple, satisfying dish to feed the Cinco de Mayo masses. Well, actually, this recipe only serves two. But feel free to quadruple it and set up a “Build Your Own Taco” buffet if you’re cooking for a crowd.
Fish Tacos with Cilantro-Lime Slaw
Serves 2
First, make the slaw:
¼ cup canola oil
2 tablespoons white vinegar
2 tablespoons honey
2 limes, juiced
1½ teaspoons salt
½ teaspoon pepper
3 to 4 cups finely shredded cabbage (about half a head)
1 small white or red onion, thinly sliced
½ cup fresh cilantro, chopped
1 jalapeño, seeds removed and finely diced
In the bottom of a large bowl, whisk together the oil, vinegar, honey, lime juice, salt, and pepper. Add the cabbage, onion, cilantro, and jalapeño. Toss thoroughly. Cover and refrigerate for 1 to 2 hours.
Next, marinate the fish:
3 tablespoons canola oil
2 limes, juiced
½ cup fresh cilantro, chopped
1 teaspoon salt
2 tablespoons honey
1 tablespoon cumin
2 large or 4 small firm, white fish filets (such as tilapia)
Place fish in a shallow dish. Whisk together the oil, lime juice, cilantro, salt, honey, and cumin. Pour over fish and marinate about half an hour.
When you’re ready to cook, heat a grill pan over medium-high heat. Sear the fish on each side about 2 to 3 minutes or until cooked through.
Finally, assemble your tacos:
4 tortillas
1 avocado, peeled and sliced
1 lime, cut into wedges
Warm the tortillas on both sides in a frying pan over medium high-heat. Wrap in a clean dishcloth to keep warm. Taste the slaw for seasoning, adding more salt if needed. Cut the fish into large pieces. Fill each tortilla with fish and slaw. Top with avocado, squeeze lime over all, and enjoy.
