Kelly Minter’s Milk Chocolate, White Chocolate & Toffee Chip Cookie
Ingredients
• 2 cups butter, softened
• 2 cups granulated sugar
• 2 cups packed brown sugar
• 4 large eggs
• 2 tsp. vanilla
• 5 cups quick-cooking oats
• 4 cups all-purpose flour
• 1 teaspoon salt
• 2 tsp. baking soda
• 2 tsp. baking powder
• 2 cups white chocolate chips
• 2 cups semi-sweet chocolate chips
• ½–1 cup toffee bits, available for purchase in the baking aisle
• Cooking spray
Directions
*Preheat oven to 350 degrees
In a large bowl, cream butter, granulated sugar, and brown sugar with a mixer at medium speed until light and fluffy. Add eggs and vanilla, stirring just until blended. In a food processor or blender pulse oats until they reach the consistency of a fine powder. In a separate bowl, combine oats, flour, salt, baking soda, and baking powder. Stir until blended. Add dry mixture to butter mixture 1 cup at a time, beating after every addition until blended. Stir in white chocolate chips, semi-sweet chocolate chips, and toffee bits.
Roll dough into 1-inch balls, and place 2 inches apart on a lightly greased cookie sheet.
Bake for 8–10 minutes or until lightly browned. Cool on the cookie sheet for 3 minutes. Then, remove cookies from the baking sheet and cool completely on wire racks.
Lindsay’s Grandma’s Open-Faced Pear Pie
Ingredients:
For the Pie Crust:
• 9″ unbaked pie crust
• 4 medium ripe pears (peeled, halved, & arranged in crust)
• Brush w/ lemon juice
For the Filling:
Combine the below ingredients and pour over the arranged pears in the pie crust:
• 6 Tbs. soft butter
• 1½ cup sugar
• 6 Tbs. flour
• 5 eggs (beaten)
• 1½ tsp. vanilla
• 3/16 tsp. salt
• 3/16 tsp. mace (nutmeg seed spice)
Directions:
*Preheat oven to 350 degrees
Peel, halve, and arrange pears in pie crust. Brush pie crust with lemon juice.
In a large bowl, beat 5 eggs. Then, add remaining filling ingredients in the same bowl and combine. Pour filling over the arranged pears in the pie crust.
Bake at 350° for 50–55 minutes, until the custard is set (but not hard)—no longer runny in the center. Enjoy!
