Happy Thanksgiving, everyone! My name is Becky, and I am thankful for so many things. However, for the sake of this post, I’m gonna be a little superficial and tell you some things that I can totally live without, but that I’m thankful that I don’t have to (and it’s not a coincidence that most of them are food-related)!
- Mexican Food – I could live on chips and queso. Seriously. It can be tex-mex, California-mex, anything-mex – as long as there are chips, chicken, and cheese, I’m a happy girl. One of my favorites is a Nashville-only place called Baja Burrito. Their pineapple salsa is DELISH.
- Reef Flip Flops – I don’t know how many other women there are like me out there, but I really love buying shoes. However, I don’t really love wearing them. If given the choice, I will put on a pair of Reef flip-flops and go. Flip-flops actually are not in the dress code at Lifeway, but I have been known to forget I have them on and wear them to work. Thankfully I have a stash of shoes under my desk in case I have to walk down to the café or go to a meeting. 🙂
- Cookie Butter – If you have never heard of cookie butter, you are missing out. Imagine peanut butter made out of ginger or spice cookies. Have you ever gotten those Biscoff wafers on your Delta flight? It’s those in a gooey yummy spreadable form. I actually don’t spread it on anything – I normally just eat it from a spoon. When I went on a mission trip to Moldova with Justice and Mercy International this summer, I brought two different jars of cookie butter – one from Trader Joes and one from Kroger (which is actually made from Biscoff cookies) and we did a little taste test. There was not a clear winner except for all of us who got to eat cookie butter!!! Seriously amazing. I did find a recipe for cookie butter cookies, but haven’t had the chance to try it yet.
- The Jordan Roll recipe from Southern Plate – a few weeks ago, I decided to try to make homemade rolls for a dinner party at my house during the LSU/Alabama game. Although I was sad my LSU tigers lost, the best thing that happened that night was the reaction to the rolls I made using Christy Jordan’s recipe from Southern Plate. Y’all – they are good. And easy. I had never been brave enough to try to make yeast rolls, but will make these again. And again, and again. You get my drift?
- And here’s my serious one – I’m really thankful that we live in a place where we have the freedom to disagree. There are always lots of things to disagree on – politics, theology, college football – and it’s frustrating when people disagree with you. But, when you think about the alternative . . .
